Marjorie, I just found this board and saw your post. It may be too late now but thought I would reply anyway. Jane Zukin has a good book called Dairy Free Cookbook that you may be able to find at your local library. In the back it lists different substitutes for milk that I have found very helpful. You may also be able to use rice milk or soy milk in the same proportion as milk but it doesn't seem to work in something like pudding. To replace eggs in cookie and cake recipes you can find a product in health food stores called "Egg Replacer" which is a powder that you mix with water and is usually good for replacing up to two eggs. I usually use a little more than what the package calls for. I think that it is wonderful that you being a grand parent are seeking answers, if only my mother in law would be so considerate of my son.
