Canola is a healthy cooking oil and costs less than olive oil. I think olive oil is number 1 and canola #2, in my opinion. I would advise using extra virgin olive oil sparingly on salads etc..where you don't cook the oil. So if you use it in small quantities it's not all that expensive. Then use Canola for cooking (although I never use any oil for cooking because oil doesn't require cooking). I always add oil after cooking. I believe that cooking the oil only serves to make it more saturated, unless perhaps you cook at very low heat for a short period of time.

If you buy olive oil in certain stores, when it's on sale, it's not all that expensive.
