Esophagitis is inflammation of the esophagus, period. It doesn't "cause" anything; it is the condition you get from reflux on the esophagus.
They don't look at your throat in endoscopy; GEs just say "not my area" and make you go to an ENT (ear-nose-throat) to check on your throat, as if it were a different issue (it's not).
REFLUXing can cause throat problems, absolutely. If you get it high enough, and/or your upper esophageal sphincter opens badly, then you can get sore throat from this, as well as other throat/mouth/ear symptoms. I haven't heard too much about the gag reflex, but some have mentioned it (I may have it too). If you have problems up in the throat or mouth, etc, it's called LPR (laryngopharyngeal reflux).
