I have a suggestion.
Jewelry & Metal Technician/Goldsmithing/Silversmithing
I am not sure what junior colleges are, in Canada we have Colleges and we have Universities. This is considered a college program of 2 years, with a possible 3rd, and an additional Gemology course of 1 year if desired as well.
So the homework is your jewelry projects. I went to an info night with my son. He too, will be in your shoes soon, and we have been searching for a program that he would be successful at. Minimal book work, something creative, something with decent living. The class sizes are very small, as everyone has their own workstations. A really good environment for him as they would get more one on one, which he demands.
We were able to see a piece of jewelry being made by one of the students, my son thought the blow torch part was extra cool

Anyways, there was a student there who was so thankful that the book work was minimal and was even struggling with the general ed. credits she had to take.
She said they stay right at the college sometimes till 11pm working on their projects...these are their homework assignments! My son loved it.
They also take their work to shows and things and sell them there, so they can even make a bit of money too. We also liked the idea that you have the option of working for yourself at home, or going to work elsewhere upon graduation. And the creative elements, endless possibilities, and extra education availability would keep him from getting bored. Also, not bad money either!
Anyways, there is one suggestion, I am sure there are many different courses/jobs meeting your requirements. If this isnt for you, then perhaps it stimulated another idea in you or someone else.
