Allergies vs Enzymes

My husband has small fiber neuropathy due to food. We know gluten and soy are culprits. He went on an elimination diet where he's only eating meats, some fish, fruits and vegetables and his pain level dropped drastically. I'm wondering if it is truly food or could it be a digestive enzyme problem? Does anyone know if they can test for enzymes? Has anyone else encountered this?
