If you know that wheat and dairy give you an upset stomach, the best thing to do is stop eating them. If a food or foods give you symptoms, there is a reason, they are doing more harm than good to your body. A probiotic isn't going to stop a food allergy or intolerance.
The digestive symptoms are your body's signal to you to stop putting "poisons" (in this case wheat in dairy) in.. I would seriously consider eliminating wheat and dairy from your diet for 4-6 weeks and see how you feel.
