What you are describing is symptomatic of a diet too high in carbohydrates.
Do you eat a lot of bread, potatoes, rice, sugar?
These foods are high on the Glycemic Index which means they break down to glucose very rapidly in your system. This in turn forces the pancreas into emergency mode and floods your system with insulin.
The headaches probably come from insulin overload which occurs once the glucose is all converted into glycogen.
Does nervousness and/or irratability accompany the headaches?
If so, I would blame the insulin. The types of spikes contribute to the development of type ll Diabetes as well.
Try going on a lower carb diet for a week.
Somewhere in the area of 40-60 carbs a day should do it.
Also, drink Green Tea with every meal.
Green Tea has "amalayse inhibitors" that inhibit starch breakdown and aid in carbs passing through your system rather than going into the bloodstream.
Good Luck

Try juicing, it works and its very healthy. Start with 16 oz of carrot juice every morning for 2 wks. Eat fresh raw veg'es through the day along with a hand full of nuts. If your starting to feel better buy a good book on jucing and it's health benifits. pick a program thats right for you and enjoy.
