 I'm on a gluten-free diet too. I'm afraid you're going to have to start doing almost all your own cooking. Cooking gluten-free isn't hard at all, but buying prepared foods is.
Don't worry about your weight - the Celiac disease was keeping you from absorbing nutrients, bust once your intestines have healed up a bit, you will start gaining naturally.
Some books for you:
The Gluten-Free Gourment by Bette Hagman.
This has yummy recipes, and also a recipe for a GF flour mix that you can substitute 1/1 for wheat flour.
Against the Grain by Jax Peters Lowell.
The writer seems like a really annoying person, but it does have some very good information. It's just that it ought to be subtitled, "How to use your dietary restrictions to alienate all your friends."
You'll also want to visit the Celiac Disease Foundation website. There is a popular diet called "Paleofood" or "Paleodiet" that is good for celiacs. Do a search on "Paleofood" and you should find plenty. Another good site about gluten intolerance in general is finerhealth.com.
My GI doctor says I do not have Celiac. My PCP doctor thinks I have a "mild" form of it. In any case, I can't digest wheat or oats.
People with true Celiac must not eat:
Wheat
Rye
Barley
Seitan
Texturized Vegetable Protein
Spelt
Sprouted wheat / sprouted bread
Oats
Maltodextrin
Club
Durum
Bulgur
Einkorn
Semolina
Triticale
Things that are up for debate, so avoid them until you talk to your doctor:
Quinoa
millet
teff
Kamut (Kamut is a wheat but some people seem to be able to use it anyway.)
Flours and you can use:
Rice
Soy
Potato
Tapioca
Cornmeal
Cornstarch
Arrowroot
Legumes
Nuts
Buckwheat

I don't know all the details, but I think canned veggies usually only have salt as a perservative, and canned fruit usually has corn syrup.
Potato and corn chips you need to read the ingredients - some corn chips have actualy wheat. Usually you can find plenty that just have "potatoes/corn, vegetable oil, salt" in the inndredients, and I think those are OK because I don't think you can get oil form wheat.
To be honest, I just look for the things I mentioned in my post. But I don't have any damage to my intestines, so I'm not as sensitive to it as you are. Your Celiac friend is probably the best guide, and I still think you should go to the Celiac Disease Foundation [removed].
