View Full Version : Green veggie ideas??

Hello all,

I’m doing pretty decent with my over diet and fitness plan so far but I can’t seem to work a significant amount of veggies into my food intake. I HATE almost all the green Vegetables (most all vegetables really) I do eat green bell peppers (raw), mushrooms, tomatoes (in sauce), onions, and maybe a couple others. But I know that’s not adequate for overall health.

Anyone have any idea how to prepare veggies (especially the green ones) for a decent meal and or snack? I need things that are quick to prepare as my current commute to and from work is killing a big part of my day. Also are salads OK to eat? I try to stay away from the salad bar as I tend to get a little carried away with the hard boiled egg pieces, cheeses and chicken pieces on most of them. I’m ok keeping dressing to a minimum (dipping instead of drowning). What about iceberg lettuce? Is that OK, I’ve heard that its “processed” to a level that’s less than ideal for nutrition, anyone have any comment on that?

I know there is a supplement out there called total veggie. My chiropractor offers this as part of their nutritional program. It is to be chewed slightly and then swallowed with water or juice. This may help you. If not then what I do is take frozen green beans and peas and put them in a tupperware container the night before. They can then be nuked and eaten at will the next day.
As far as lettuce goes, it offers little nutritional value and it is very hard to digest. I have IBS so I stay away from it as often as possible.

If you ever make home-made pizzas, add some spinach alongside the other stuff (my favorite is olive oil, garlic, spinach, feta, and sundried tomatoes, mmmm) - it pretty much loses its flavor when its baked and crispy. Or is you have a noodle dish, throw some steamed broccoli on with cheese. Steamed veggies are yummy if you add "Spike" seasoning to them, like green beans, carrots, zucchini, peppers, and potatoes. Another idea is to get yellow and green zucchinis and fry slices of them lightly in olive oil until they start to brown. I'm a fan of salads - I guess I haven't heard that iceberg lettuce is bad for you, although it makes sense that it has little nutritional benefits, since its basically just water and nothing else, so it needs to be mixed with other things like chicken and cut up fruits or veggies. You could also mix some spinach or red cabbage into your salads.
