Hello all,
I’m doing pretty decent with my over diet and fitness plan so far but I can’t seem to work a significant amount of veggies into my food intake. I HATE almost all the green Vegetables (most all vegetables really) I do eat green bell peppers (raw), mushrooms, tomatoes (in sauce), onions, and maybe a couple others. But I know that’s not adequate for overall health.
Anyone have any idea how to prepare veggies (especially the green ones) for a decent meal and or snack? I need things that are quick to prepare as my current commute to and from work is killing a big part of my day. Also are salads OK to eat? I try to stay away from the salad bar as I tend to get a little carried away with the hard boiled egg pieces, cheeses and chicken pieces on most of them. I’m ok keeping dressing to a minimum (dipping instead of drowning). What about iceberg lettuce? Is that OK, I’ve heard that its “processed” to a level that’s less than ideal for nutrition, anyone have any comment on that?
