If walking for 30+ minutes, does my body keep burning sugar even after exercise?.

It depends somewhat on how vigorously you walked, and whether or not your body is used to that type of exercise on a regular basis, but the short answer is yes.

If you walk a couple of miles every day at the same time, your body will eventually become somewhat used to that level of exercise and, while your blood sugar will decrease during the exercise itself, the decrease may not last as long as it would in someone who was not used to that level of exercise. For example, if you're totally sedentary, and then one day you walk a few miles, your blood glucose will go down and it may stay down (if you don't eat) for several hours (I'm talking like 8-10 hours). If, on the other hand, you do the same amount of exercise every day, it will probably go down during the exercise and for a couple of hours afterwards, but not for as long.

There's no way to fine-tune this, as everyone is different, but that's a general idea of what happens.

Even moderate exercise elevates your metabolic rate for up to 36 hours afterwards. The effect of a higher metabolic rate is to burn calories even while you are asleep at night. You can burn up to an extra 100 calories a day in this way. IMHO the secret is to exercise every day.
