Hi again, :wave:
I'm one of those people who looks into everything I buy and I like to do research and recieve feedback on opinions that pertain to what I'm asking about. :) Right now, I'm going to REALLY eliminate wheat from my diet this time, and as much gluten as I can. I started to do it, but ended up buying Kashi blueberry waffles(full of wheat) and I also bought oatmeal bread but I know it has wheat in it. Sooooo, I'm kinda excited because I went to Whole foods today and examined EVERY frozen bread possible that was wheat free and remembered that VeggieGirl mentioned something about Spelt bread and it didn't look all puny and little like the other breads and it said on the back....
Spelt is the "Mother Grain" of the five ancient grains. A good wheat alternative because spelt's gluten is easier for many to digest whilde containing more portein and fiber than wheat.(BTW, right there I was like cool. :cool: )Spelt , the most used grain in the U.S. until 1910 has a delicious, sweet, nutty taste that is regaining popularity on America's tables today.

Note: If you have a wheat or gluten allergy we remommend that you consult your doctor regarding which cereal grains you should avoid before eating this bread. Spelt bread may not be digestible by some people with certain wheat and gluten allergies. (So, Losec I guess that goes for you right?) I tasted it and it is soooo good. I was like "This is what bread is supposed to taste like."
So there is a reason why I have constipation problems and it may be wheat. I already eliminated cows milk from my diet and i still have some problems, although the colace is helping but I can't take it for the rest of my life! :eek: Although this bread has gluten in it, does it mean that it's still not as good as "gluten free" bread? Is ALL gluten bad, like spelt and oatmeal? All opinions and ANY feedback is greatly appreciated. Right now, I'm going to do a search on the net and google it. This bread is awesome and it's not that expensive, I got it for $3.49. Oh, and what do you do since it is frozen, do you guys let it sit out for a few minutes. Today I microwaved it but I won't do it all the time. :D

is there a date on this bread Jess..?? I always new that spelt was betta then wheat..also Kamut is great to for you, Jess.. anyhow im glad you'r still working on this..I thought you gave up..noway I know you'r a fighter..gogogo Jess.. I can't have those..:(..oh well ill keep eating my corn breads, or potato breads..LOL..no wonder my ***** doesn't stink, im not eating wheat..LOL..also try getting some rice cookies, the pamela ones are amazing..mmm Like I said Jess.. you do not have to iliminate it completely..I think if you are sensitive to it..then the less you eat of it, the more you might react to it..but, you'r doing great, keep it up Jess.. im soo happy for you.. :) ;)

hey Jess i just bought 2 loaves of spelt for my mom yesterday and, loves them..could you believe that, she was suffering from arthritis and, it was all bacuz of the wheat..she doing soooooo much betta..lol

Where is your signature? What do you mean? And, do you think her arthritis is due to wheat? Did she check with her doctor about the fish oil? Cause that would help. :) So, how long did she abstain from wheat?

Hey Jess, I think actually I bought Sprouted Soy Bread (or something like that) that had no wheat, but I've heard good thinks about spelt also. How was it?

Just read all your posts on spelt. Just wanted to add I went to a naturopath doctor who recommended I don't eat wheat products and cows milk products for a while. I wanted to let you know a few other alternatives. Spelt flakes are a good cereal breakfast. They sell them in the health food store. Also millet is good for a cereal and buckwheat is good too. All can be substituted for wheat. As alternatives to cow's milk product there are goat's milk products which are nasty, but what is very good is almond milk. In the health food store. It tastes great with spelt cereal. Just wanted to add my two cents, hope it helped.

huh! this doctor you went to see told ya to cut down on wheat and, replace it spelt..or healthier alternatives..etc..He told you to eat like this for awhile..I think you should always eat like that.. :) yup yup

I still don't get the signature thingy at ALL Losec, lol. And (forget the name), the poster who said that spelt flakes are good, are they high in fiber? I've been real good lately and just had my waffles made from brown rice and they are also gluten free. :p And, I will be eating this bread because I need to pack a lunch sometimes and I know the "oatmeal" bread I was buying had wheat in it. I am going to obstain from most gluten and wheat for a few weeks and see if my constipation goes away. :) Well, I guess I should stay away from wheat all together huh? Oh, and btw, my tummy feels VERY good today, like I'm not constipated and it only has been a few days! Today is when I noticed this. So far I'm not bloated etc. :bouncing:

Hi, to answer all the questions, the reason I went to this naturopath doctor was for a thyroid problem and inability to lose weight. As he tested my every organ one of the many problems he discovered was that I have an insulin problem so he wanted me to stay away from the higher glycemic foods to get that under control. I can't eat bread even if it is made of spelt. This is temporary until my levels get under control then I can gradually start introducing back bread, not necessarily abandon all the better grains. Millet is a type of grain, they look and kind of taste like mini rice puffs. I eat them just like I do cereal. Only 60 calories per cup. The only buckwheat cereal I have seen is cream of buckwheat and its just OK. I have to mix it with some almond butter to make it taste OK. Since I can't have peanut butter. The spelt flakes have 3 fiber grams per cup.
I never knew wheat was unhealthy either and here I always thought I was being so good avoiding white and unbleached flour.

Well neither caused my thyroid problem, its genetic for me, my mom has it, but he thinks my diet is causing the meds I am taking for it not to be absorbed properly into my system and thus not helping my thyroid, which is part of the problem why I can't lose weight. The thyroid controls the metabolism and if thats off your metabolism gets sluggish, so everything connects. So he thinks fixing my diet with eating low GI foods, plus there are a million other foods I can't eat, its easier to talk about the foods I can eat. I also can't eat any condiments including any salad dressing and mayo due to the vinegar that its always made with. I am allowed to make my own mayo and salad dressings through using the atkins recipes, which some don't use vinegar. Also certain vegetables I can't eat like mushrooms because its a fungus and I have a yeast problem as well from the BC pill. The diet is so limited I don't know if I can make it 5 more weeks. I can have 1 cheat meal a week, but its not like a Mcdonald's cheat meal, its like I can have shrimp or something you would think is healthy but its on my no list.

Thanks, unfortunately with thyroid problems its a lot of trial and error, it can takes years to get it under control.

If you like to bake, there are a TON of GREAT bread recipes online for Gluten-free bread, or just wheat-free, if you'd like. You can use a wide assortment of flours such a sorghum flour, garbanzo bean flour, buckwheat, millet, rice flours, arrowroot flour, etc. I have made delicious breads (as well as cookies and cakes!) with these flours. Spelt bread IS delicious, and even though it has a more digestible form of gluten, it isn't considered gluten-free. But that depends on whether or not you can tolerate gluten, so it's your choice. Oh, there is also amaranth flour and kamut as well. Van's brown rice waffles are a good gluten-free breakfast choice and have no refined sugar as they're sweetened with fruit juices only. If you like to bake though, definitely look up some recipes online, or if you need a few, I think I might have some lying around:)

Jess, I stopped eating wheat when I starting getting LOTS of pimples. I spoke to a holistic doctor who told me that hormones and wheat/sugar cause or at least contribute to acne. He said that the intestinal flora kills bacteria but that when you eat too much wheat and sugar they both feed bad flora which causes an imbalance. So, I cut it.
I can't say definitively what causes acne, but theres really nothing good (nutritionally) about eating bread, pasta or white rice. And cutting those things helped me to get in better shape. I haven't ruled them out completely but I just eat them here and there.
Also, about the bread, you should freeze it. It only takes about 1/2 hour to thaw a slice.

Good luck to you. The candida diet is HARD! I was recommend that diet by a holistic doctor and it meant not having anything fermented or anything with sugar or wheat!!! I just couldn't do it. (it was 6 yrs ago and i had no willpower back then!!)

Jess, I stopped eating wheat when I starting getting LOTS of pimples. I spoke to a holistic doctor who told me that hormones and wheat/sugar cause or at least contribute to acne. He said that the intestinal flora kills bacteria but that when you eat too much wheat and sugar they both feed bad flora which causes an imbalance. So, I cut it.
I can't say definitively what causes acne, but theres really nothing good (nutritionally) about eating bread, pasta or white rice. And cutting those things helped me to get in better shape. I haven't ruled them out completely but I just eat them here and there.
Also, about the bread, you should freeze it. It only takes about 1/2 hour to thaw a slice.

No, I don't think all gluten is bad at all, for those who have no reaction to it, but unfortunately many people do have reactions to gluten, and there are many conditions which improve by eliminating gluten. I am not "allergic" to gluten that I know of, but I DO react it to it in many ways such as gas, bloating, extreme pain, mood swings, depression, etc. I may be Celiac, but I wasn't able to go back to the gastroenterologist because I lost my health insurance and have been uninsured for the past year, which is going to change March 1st!:) But anyway, you might want to just TRY eliminating gluten completely, just to see if it helps. If you don't notice significant improvement, go back to it, but it can't hurt, seeing that there are so many healthy, delicious, gluten-free breads and foods. Good luck:)

Hey Losec,
I just got some Rice bread and Kamut cereal today. :) I've been very curious about what the taste of rice bread would be like, and Kamut. :D The rice bread is made by "French Meadow" and it's yeast free and organic and it also says whole grain on it. And each slice is "0" fat, wow. The Kamut cereal is made from Nature's Path. So, I had an organic chicken burger with the bread today and some organic steamed brocolli, and tastes pretty good. :D I'm on a new "less gluten, no wheat" kick and I'll let you know how I feel. :D :D :D

Yeah, I do have quite a few Celiac symptoms. Only a few more weeks and I can finally get tested!:) The thing that confuses me though is that most people get dramatically better when they stop eating gluten. I haven't been eating gluten for probably eight or nine months now, and although many of my symptoms (definitely the mental symptoms) went AWAY, I'm still really quite sick. I have all the symptoms of leaky gut syndrome/candidiasis, and now I have terrible joint pain like I have arthritis. And I'm only 20. The only theory that I have is that maybe I AM Celiac, and gluten damaged my intestines so badly that it caused the leaky gut and candida overgrowth. Oh, well, I guess I'll find out soon:) What a relief.

and, solstice are you sure you'v removed gluten completely bacuz if you did remove it..but, not quite completly then chances are you might be reacting to just an itsy bitsy..bit of gluten..if you body doesn't want it then you can't let you ody have it..i just want you to know that gluten is everywhere..yes madame..its also in your lip-stick..everything that goes in your mouth has to be checked..I am totaly gluten free and, have got so much power and, can pick you and, Jess. up and, cary you a mile away..lol :) :)

Yup, I'm 100% sure that I've been on a 100% gluten-free diet. I'm EXTREMELY careful, and eat mostly meat, veggies, and now, recently, more carbs like corn and rice. I forgot what one you can't do if you're not eating gluten. When I had health insurance, the gastroenterologist was going to test me for Celiac Disease, but said he couldn't because I wasn't eating gluten, but I honestly think that he just didn't want to do the other test that he could have because he thought it was "very far-fetched" that I could be Celiac due to having chronic constipation instead of diarrhea. Whatever. That doc wasn't worth my time:)

hi there from experience..i will say that if you feel better without wheat..then to me that would be a diagnosis of this disease..doctors have a hard time diagnosing it bacuz it is very difficult to diagnose.. :)..
personally i think the human body was not designed to eat all this gluten on a regular basis.. yet lots of people are very sick from it but, they still keep on eating it..but, yet people will wait until they are very sick and, then do somtin about it.. :)

It's frustrating to watch someone ignoring medical advice that will keep them healthier longer, but we all have the right to decide just how far we're going to "push it". I have a wheat-free house (and a cooperative hubby :) ), and I often bring my own homemade buckwheat bread or rice crackers with me when we visit friends or go out to restaurants just in case my choices are limited when I get there. I've learned not to order lentil dishes in Indian restaurants, because the lentils are often contaminated by some sort of grain that gives me acid indigestion. I pick through the lentils at home before I rinse them and cook them. In other words, I try to live as gluten-free as possible.
But, my long-term health also depends on my getting off my rear end and doing a lot more exercise, and this I don't do! :rolleyes: We all have our limits!

hey you sound pretty organised.. good stuff.. :).. why don't you just go for walks..say 45mins a day..that would do you good :).. keep it up ;)
