Is it normal when you run your hand through your hair with your fingers pinched together, that you'll have 1 peice of hair come out? I don;t know if this is normal or if it's all in my head.

Grow to determined length -- dormant stage -- new hair starts growing -- old hair falls out. The ones that are easily pulled out are ones that are in the dormant stage (like a baby tooth ready to fall out). The whole head of hair is replaced every 2 - 4 years.
