View Full Version : Need Cake or Pie Recipe for diabetic

Hello everyone! :) I would like celebrate my Dad's birthday and father's day (which is this Sunday) by baking either a cake or pie that he can eat --sugar-free! Please send any recipes that I could use. Much appreciated.
P.S. I did do a search at Splenda.com and didn't really find anything that is truly sugar-free. Thank you! :cool:

I make these for breakfast but you could use as a birthday cupcake.

Beat 2 whole eggs on high for about a minute. This is important.

Add 1/4 cup flour (I use spelt as it's healthier) to the side of the mixing bowl.

Add 1 scoop unsweetened chocolate flavored whey protein powder, to the side of the bowl also.

Mix on slow speed until flour and whey are mixed in and then on med-high for aanother minute.

Add 1/2 cup mashed banana and blend well.

Spray 6 muffin pan cups with PAM Oil Spray.

Divide batter into these cups.

Bake at 350 degrees until centers are baked, about 15 minutes. Check at 12 minutes, don't let them burn on the bottom.

I like them warm from the oven but you can reheat in microwave. They have a heavy consistency but a great flavor.

I've used UniKey's Fat Flush Chocolate Whey Protein Powder because it is only sweetened with pure Stevia Plus, no other additives to affect blood sugar levels.

This recipe does not work with adding additional liquid flavoring, like vanilla. I'm working on that.

Another thing you could do would be fresh fruit cups, arranged in dessert dishes with a small amount of whipped cream and a candle in his serving. Fruit is also converted into sugar fairly quickly, but portion-wise, it's less carbohydrate-dense than most baked goods, and it's also healthier. Berries are particularly low in carbs as is, believe it or not, watermelon.

For a diabetic, it isn't the sugar itself that counts, but rather the total amount of carbohydrates. Many sugar-free products have just as many, if not more, grams of carbohydrates per serving as the regular sugared products. Since carbohydrates are converted to glucose fairly quickly, it is carbohydrates that a diabetic needs to be concerned about. Sometimes portion control is what's needed, rather than simply "sugar-free."

It's really thoughtful of you to want to bake something special for your Dad's birthday and Father's Day. If you are going to do a cake, do it without frosting, and a small piece should be okay. Forget cake with frosting (unless he's on an insulin pump or fast-acting insulin that he can adjust to accomodate the cake). Cake with frosting is one of the worst things we diabetics can eat (although I admit to being guilty of indulging on RARE occasions, but I'm on a pump and can adjust for it).

Whatever you do, I'm sure your Dad will appreciate having such a loving and thoughtful daughter.

I would love to have my wife use this recipe, but I can't have chocolate. Any other suggestions? Also, my bs in the morning is around 130 am.

I eat very little for breakfast. This morning I had a small amount of eggbeaters, 2 bing cherries, 1/8 of a banana and at noon my bs was 165. This is happening on a regular basis.

So I need help with the cake and an idea of what is happening with my bs. I now have to eat very little for lunch or it will skyrocket. Thanks for any advice.- sam

You can try substituting vanilla flavored whey protein in place of the chocolate flavor. I'd still use the mashed banana but no additional liquid flavoring. Or, try some mashed strawberries or peaches with the vanilla flavor, Drain off excess liquid first.
