I got this idea for a meal from my a local salad bar. It is great for those on a low carb diet, and also for those who may have arthritis or cardiovascular problems (the salmon is great for these).

Salmon Salad (for 4-5)

1 can of Salmon (14.7 oz.) like Bumble Bee
2 large tomatoes or 4 medium size tomatoes
1 large onion
1 can of black olives (most large cans have about 44 olives in it)

Empty can of salmon into bowl

Cut up the tomatoes into small pieces, but cut out the "jelly" part of the tomatoes (you don't want to add in otherwise the salad will get mushy). The amount of tomatoes in the salad should be equal to the amount of salmon.

Cut up onion and put in.

Cut the black olives in half and put in.

You can add olive oil or salt if you want.

Also, you can make this as a stuffed tomato as well. Just use the salmon, onion, and olives to stuff the tomato.
