I'm trying to find some good info for my mother. She is diabetic and wants to know how the exchange diet works. The info I have found seems incomplete.

the amercian diabetic association is probably the best. i am a diabetic controlled though diet. no meds. the dietician put it to me simply. 2 carbs(make them whole grains with some fiber) 2 fruits, and the rest protein and green vegetables. greens have carbs in them but they are so low that i don't even count them. eating this way has helped me to lose almost 40 pounds and keep my glucose down around the same as a non-diabetic's. she also told me to have a treat once in a while but eliminate 1 carb that day and make it something with no sugar added.

Your mother might want to ask her doctor for a referral to a registered dietician (RD) who can work with her to decide what exchanges she should have at each meal and for snacks. An RD should also have available a booklet which lists the exchanges and describes the portion size for each exchange.
