This may sound stupid but I want to know if a person can develop an allergy to beef and pork liver? I've eaten it all my life and love it but about a year ago I noticed a itchy, burning feeling way down in the back of my throat and deep in my ears. Over time it became stronger and stronger. Then a few weeks ago I ate liver and it happened again REAL strong and my eyes started swelling up and itching as well as the itching and burning in my ears and throat. I've never heard of someone being allergic to specific parts of an animal. Come to think of it I've never heard of anyone being allergic to meat. Anyway, this doesnt happen at all when I eat chicken liver. This is the craziest thing!

Over the years I've come to realize that people can be allergic to anything and you can develop allergies with things that were okay before. Try not eating the possible culprit for a few weeks, than try some, if your allergic you will get a reaction. It could be something the farmers put in the animal, if this is the case, going for organic meat may help. If it's the actual meat, it's probably you, if your body cannot process the meat than it is treating it as a foreign invader and your having an immune response. And or, it is sitting in the stomach and just fermenting, perhaps you have a problem with fat absorption and enzymes before you eat will help. :)

Could it be you are allergic to onions? That is a more common allergy, and I know liver is usually served with them.

I have already noticed that it only happens when I eat liver. But I hate the onions so I know its not that! I think its strange to be allergic to only an organ and not the whole animal. I eat all other types of beef and pork and have no symptoms at all. Just the liver. The only spice I use on it is salt.
