I'm not that great of a cook so I eat basically the same kind of meals all the time (chicken with vegetables, pasta, salads, etc.). Basic stuff. Does anyone have any healthy recipes that don't take a lot of time (I work 2 jobs and don't really want to come home and make a complicated dinner :)). Also, any suggestions on healthy salads to take to work would be appreciated too! Thanks guys!

Hello
Here is a good healthy salad I make:
Grill/Bake some boneless skinless chicken up
Cut it into small pieces and it in a bowl w/ BBQ sauce (I love Sweet Baby Rays BBQ sauce!) and put it in the fridge.
Make your salad
I use:
Romaine and Spinage
Tomatoes
Corn
Fat Free cheddar cheese
And baked pita chips
Combine everything and its great, refreshing and easy. The pita chips give it a nice crunch and if you prepair them yourself with low fat tortillas the salad is super healthy. (if your bringing it too work dont add the chips till your gonna eat it cause they get soggy!)
Oh yea and you serve it with Low fat or Fat free Ranch Dressing.
Breakfast for dinner is always a good quick meal.
Also a lot of people on here pre-prepair (if thats even a word) their meals over the weekend so they are all set for the week, so maybe you could try that?
Good Luck :)

Thanks Jade! That salad definitely sounds like something I'd like. I think preparing meals in advance is a good idea for me too. I do have a foodsaver so I could definitely freeze plenty of meals. Thanks!
