We are starting the gf/cf way of life in the next few days, can anyone help with a few things that our 3 yr old will at least try? Any ideas at all will be greatly appreciated. Right now he will only eat pancakes,with Mrs. Butterworths, he carries her bottle around hugging her,crackers,chips any kind,and toasted cheese. We really don't know where to start.

First of all, don't pressure yourself into getting everything just right within the next few days. It's kinda hard at the beginning and many many mistakes and slip ups will happen. It helps to individualize your plan, make a list of things the child will eat and then find a suitable substitute. No sense introducing a food like say bagels if they were never interested in bagels before.
Milk will probably be the easiest as there's lots out there: soy, rice, potato, almond etc. The big "G" is the hardest here and instead of going all out and buying a bread maker, I found it easier to use the GF/CF free mixes out there and put them in muffin or small loaf pans and that way they're already for lunch or a school snack. You'll probably do alot of experimenting till you get the right food that they'll eat. :)

kinnikinnick's makes a great pancake mix. My extremely picky son loves it. They also make a great personal pizza crust. I just top it with Enrico's pizza sauce and bake for 10 minutes. They also make a great white bread. Just google kinnikinnick for the website.

start off by removing dairy first. DOn't do it all at once.. if you do, the withdrawl will be very hard on you and your child.

Take away any and all dairy. Keep in mind hidden sources (hot dogs) and other things. switch to soy milk (if there isn't a problem with that) or you can go with the potato based verison or like me, just skip milk all together and give 900 - 1000 MG of Calicum a day.

Don't get over whellemed. With the dairy, you should see results in a few days.. gluten takes a little longer. it also depends on how much your child reacts to that food anyway. It seems like yours is more with the gluten than the dairy.

Thank you all so much. Don't know what I would do without everyones help. Keep the ideas and helpful hints coming. Drew needs them. No, we need them!!!! He is something else when it comes to his gluten!!! He looks at us like we are crazy if we offer anything else. Almost like "are you talking to me"? We have to laugh at the look.

Eleanor also loves her pasta. We tried all sorts of different gf types. It turns out that she loves Quinoa pasta. It's some sort of grain mixed with corn. It has a normal pasta texture and it's packed with protien.

She also likes beans and chips - tortilla chips with refried beans on top. We buy the vegitarian beans because they taste so much better.

She'll eat mashed potatoes every day if we let her - so I mix veggies in with them. She'll also eat ground turkey because it has a soft texture. And today I made her some plain Quinoa pasta and made my husband and I salmon. She ate 1/2 of my salmon!!
