I don't know much about how health insurance operates so please educate me :)

I have an HMO under my parent's employer. Can I go to anywhere that will accept HMO's or do I have to go to the family doctor to get a referral?

It is a long story, but my parents have a particular philosophy regarding certain types of doctors and medications. So if I used the insurance for a visit, will they know by maybe a bill or statement that I visit so-and-so or got this-and-that?

Typically, HMO's require referrals to see doctors other than your primary care physician. The only exception that doesn't require a referral in most HMO's is gynocology visits. Not all insurances send statements. Try to call the member services number on the back of your insurance card. They should be able to answer your questions.
