I start off the day with a bowl of special K and some fruit, then for lunch I usually have either a salad or another bowl of special K and fruit, then for dinner I usually have a salad, sometimes I'll vary it up with a soup or occasionally a sandwich. I also eat fruit constantly through the day (usually I have about 3 or 4 banannas and 3 or 4 apples throughout the day, apart from my meals) and I try to get my protein in with tofu or grilled chicken on top of my salad.
Healthy?

sounds pretty healthy to me. But it sounds like you might need to Add more protein to your diet. You should calculate what your daily percentages of Carb/Protein/fat are. and see if you are eating enough protein or not. You may also need to add some "Good" fats to your diets. Nuts are a good choice.

I totally agree with the above poster.
If I were you, I'd add some healthy protien (I know that if I don't get enough, I feel exhausted all the time) as well as some healthy fats (I second the nuts!)
But really, with that amount of fresh fruits and veg, as long as you are feeling great, you are probably doing things right!

it sounda a good diet on the whole, but maybe you could vary the types of fruit you eat in the day. so for example, instead of 3 apples throughout the day you could have an apple, a mango and a kiwi fruit etc. that way you will be getting a more varied and broad range of nutrients, while still be getting 3 servings of fruit

I think you're doing well (maybe eat a bit more--is it cold in your area?--when it's cold, your body needs more fuel), but I also suggest varying the foods that you eat. For example, try eating raisins, dates, strawberries, blueberries, blackberries, coconuts (and its milk) etc. Also, don't stick to the ordinary--eat things that are a little out-of-the-norm, as this will definately give your body a lot more vitamins, minerals and other nutrients to draw on for energy and physical/mental health than you might get from eating all the run-of-the-mill foods. With the leafy foods, remember that darker is healthier and is more nutrient rich.
I have actually not been sick for about one whole year now...and I have been around a lot of sick people (I'm interning in a medical office right now ;) ). In fact, my friend was really sick today, and I was tutoring her, and I still feel excellent. I told another woman that I have been taking a multivitamin and calcium, and I have been focusing on getting at least 6-7 hours of sleep every night (ideal is 8 hours, and I do that on occasion, too).
I think the bottom line is that you take good care of yourself by giving yourself what your mind, soul and body needs. I really wanna get involved in a Yoga class, but that will come in time... :)
