You may want to try juicing your own drinks. Then, it would be fresh. I think a lot of the health benefits are probably lost from the processing that's done to make V8. And, by the time you receive the drink from the manufacturing plant, there's probably very little nutritional value left. Just my 2 cents.

It is better than doing nothing at all, but, no, it won't fill in all the gaps. V8 is a very processed food, so it has lost some of the vitamins and nutrients from being processed, it does not contain the beneficial fiber of unjuiced veggies, it does not contain the beneficial enzymes of raw veggies.
Does soup work for you? Stew? Or veggies in any form besides V8? Anything, to start, at least?

Peas and green beans are good, try putting something you like on some new veggies.
My niece would only eat red food, so all veggies had catsup, and all sweets had strawberry jam. Try a little cheese sauce or ranch dressing on broccoli or cauliflower, maybe sprinkle some herbs or spices on some fresh sauteed zucchini.

i'll vouch for the juicing idea. if you don't like the taste of veggies then drinking raw juice is the answer. drink 1 pint of juice at a time. by making a base of 50% carrot, apple (2:1 ratio) with the juice of half a lemon you can then add whatever vegetable to it after that but the whole lot still taste great. apple juice is notoriously sweet but has a low GI so won't cause rocketing blood sugar levels, and carrot juice is also sweet too (nearly sweet as fruit juice) and again will not cause problems over blood sugar levels as it contains an insulin like compound. you can vary what veg you use each time, which means that even the veg you hate ther most you'll be able to reap the benefits of. eating raw fruit in its whole state is great, eating salad veg too but beyond that raw veg like broccoli and cabbage is quite indigestible. you body will digest it but has a hard job extracting macronutrients from the fibres and this is quite energy consuming this is why most people cook their veg, but as we all know cooking destroys a large percentage of vitamins, some minerals and all enzymes. by juicing you make digestion of a raw food a whole lot easier, but all of the enzymes and vitamin and mineral content is intact.
so i'd strongly advise you to invest in a juicer. you can pick them up for about £50 but considering V8 is quite expensive anyway you'll soon save money by making you own RAW juicwe which is nutritionally far superior.
feed out,
alex.
