Sometimes I buy wholegrain, unpolished rice in bulk form. The generic cooking instructions say "simmer" for at least 40 minutes.
I never cook my rice that long, although I do let it sit in the pot and absorb moisture. My rice ends up quite firm, almost crunchy.
Is this rice hard to digest? Could it be harmful?

I don't think so. My hubby and I disagree on how "cooked" our rice should be -- he likes it rather crunchy and I like it starchy. I've never heard that there's a problem with eating it a bit underdone. If you like it that way, then enjoy!
