Hi all :wave:
I am new to the board! Sorry for my English (I'm from Europe) I am looking for some Quinoa recipes. How can I prepare it? I've read that it is very healthy.
The only recipe I know is for sweet quinoa. Rinse, and then cook quinoa for twenty minutes, add grated apples, honey and almond. Cook again for some minutes.
Other suggestions?

Here is a nice salad I make often:

Black Bean and Quinoa Salad

Ingredients:

1/2 cup quinoa
1 cup white corn
2 scallions chopped
1/2 cup chopped tomatoes
1/2 cup chopped celery
1/2 cup chopped green peppers
1 can black beans, drained and rinsed
Dressing:
3-4 tablespoon oil...not a heavy olive
2 tablespoon lemon juice or balsamic vinegar
1 clove garlic minced
salt and pepper to taste
celantro or parsley

Directions:
Serves: 4-6.

Cook the quinoa. In the last five minutes put in the corn if using frozen. Drain and cool. Mix the remaining ingredients in a bowl and pour the dressing in and mix well. This is good the next day as well. Best if served cold. Substitutions can be made for the vegetables...red onions, grated carrots, what ever you prefer.

Is quinoa available at some grocery stores? Or mainly just at health food and whole food stores? Thanks.

It's available at most grocery stores now. It's in the rice section. I try to buy it in bulk at a whole foods store because it's a little cheaper that way.

I like it. It's not as heavy as rice.
