You'r suppose to have a balance meal whenever you eat.

I bring w/ me chicken breast, but i don't know what to eat it with ( carbs?). It has to be very easy to eat...not requiring a spoon/fork

Anu suggestions?

Put it between two slices of whole-grain bread or sub roll, topped with veggies and a slice of skim-milk cheese. Get yourself some really tiny tubberware containers and put some vinegar in one, some olive oil in the other (or make a vinagrette in advance and put it one container...shake well before use). Right before your meal, drizzle your oil/vinegar/vinegrette on your sandwich.

Another option would be bringing a handful whole-grain crackers -- I like Triscuits personally.

We often make our own pizzas w/chicken, veggies, skim cheese on whole wheat pizza crust or by slicing a whole wheat hoagie roll in half lengthwise. This would need to be leftovers in your case (since you would need a knife to cut the pizza in slices) and you would need a microwave to reheat it -- or maybe not if you like cold pizza!
