I would really love to become a vegan or even just vegetarian (I'm an environmentalist) except I have colidis and it's irritating to my bowels to have anything high fibre or raw veggies and fruit. Could I be sustained on cooked vegetables and tofu and all that and would it be healthy?? I don't want to damage my body or gain weight just to give up animal products.

I'd say go with it.
There is a lot of evidence that supports a high fiber diet as a TREATMENT for colitis.
At first it might feel a shock to your colon but over time it may well adjust and heal.
There is a school of thought that claims, with some justification, that our dreadfully low fiber modern diet is a main cause of colitis.
Start with the softer soluble fibers like pectins and legume fibers (and psyllium) before you move to the coarser insolubles like brans lignins and cellulose (raw celery, carrots and the like.)
For protein, make sure you get enough of the bean and pea family.
If diarrhea is part of your syndrome, go easy on the fruit.
