I have had Type 2 diabetes for about 3 years, am not on meds, and everything has been under control. My A1C readings run around 6.2, fasting levels around 100-115. Lately my readings have been low even after I eat something bad. This morning at 7AM I ate a large Belgian waffle with syrup with a cup of coffee. At 9AM I took a reading and it was 66. I was expecting it to be high and was extremely surprised it wasn't. I purposely had a bad breakfast 'cause I was doing a test. The other day my hubby and I went out to dinner......chopped steak, mashed potatoes, mixed vegetables, chicken rice soup, roll and large piece of chocolate cake. Two hours later my reading was 90. Here again, I expected a high reading. What is going on with my body?

Did you ever have hypoglycemia? That's what this sounds like. Since hypoglycemia is often a precursor to T2, maybe what's going on is that, for some reason, your pancreas, which is probably still producing insulin, has gone into overdrive and is overreacting to carbs.
Try eating a meal that is very light in carbs, but also includes protein (like a big salad with some sort of meat in it, no croutons, low-carb dressing) and see what happens. Might give you a clue as to whether or not you're experiencing hypoglycemia.
Also....have you lost weight since being diagnosed? That could affect things, too. Insulin resistance tends to become much less severe, or disappears entirely, with enough weight loss, and again, that could be causing you to revert to hypoglycemia.

Today I had the following meal for lunch:
2 slices roast beef
about 10 small potatoes (1" cubes)
about 10 carrot slices
I several readings afterwards:
1/2 hour after I started eating 96
1 hour after 114
1-1/2 hours after 86
2 hours after 82
Seems like I peaked at 1 hour after I started the meal.
Tonight we went out to a Chinese buffet. I had mostly chicken and broccoli, some pepper steak, and a small portion of pineapple chicken. I wasn't home an hour afterwards to take a reading but did one at 1-1/2 hours. It was 89.
At the 2 hour mark it was 106.
I haven't lost a significant amount of weight lately......maybe 6 lbs.
