You should see a doctor. Some amount of bloating and water retention is normal with recovery but too much can be a red flag for more serious issues. I'm not sure about the balance issues. Those could be caused by dizziness and too few calories or poor nutrition or even inner ear issues. My advice is to see a doc (preferably one specialized in treating EDs) and get checked out. Even see a general practitioner if you can't find someone specialized in EDs. Get your electrolyte levels checked and see that everything is fine with you physically. Good luck!

I'm sure being dehydrated contributes.
I would urge you to see a doc and get your electrolytes, kidneys, liver, thyroid tested though to be sure nothing more serious is going on.

I think you should see a doctor and just check that everything is OK with you and your electrolytes.
However, you will have bloating when you go from restricting and start eating more. It's not pleasant but it happens.
For me, it lasted about 6 months after I initially got to a normal weight for my height. Some parts of my body the bloating persisted for a year.
Once I could exercise moderately again (just walking and not much of it), my situation seemed to improve. I think it took that long for my body to realize that I wasn't going to starve it again and for my metabolism to kick up.
In addition, you need to drink lots of water and try not to eat too much salt as salt can worsen bloating.
