Well...I'm not vegan, but I've been using some interesting vegetarian recipes.
I picked up this book called "Matt Roberts Fat Loss Program" and it has some great recipes using whole grains. It uses a lot of fish, but you could substitute tofu or other veggie proteins.

Soy protein for post-workout shakes will be very helpful (very inexpensive if you buy in bulk from the health food store). For general meal ideas, your best best would be to do a search for "vegan recipes" online. There are several websites dedicated to the vegan lifestyle. Just try to keep it high protein as possible. Eggs are pretty versatile also, but to keep fat down, the egg substitute is also a good choice.

Vegan Bocca Burgers are indeed a good source of protein, 13 grams per burger with only 1g of fat and 2g net carbs.
