What are your stats (height/weight)? Do you do any strength training? How many meals a day do you eat? What kinds of foods?
2000 calories as a maintenance level is usually too high for women unless you're exceptionally tall or have a very high metabolism. You might want to start by dropping that to 1800-1600.

Just cut some calories and keep up the cardio you'll see results. Also, be sure to eat right and drink plenty of water. Don't watch your weight so much but your waist. Remember, muscle weighs more than fat.....

chookie,
Obsessively exercising because you are scared of gaining weight is an indication of an eating disorder. A pound or two in either direction now and then is just the body's way of adjusting itself -- water is normally in flux, and your body will regulate itself without you having to obsess about it.
Yes, you can skip a day or two per week and your body will be fine. If you overdo it, your body will rebel and try to get your attention that it needs help -- by making you exhausted.
My suggestion is to throw away your scale and take at least one day off from exercise per week.
