Hi all,

My aunt is having a female related procedure on Monday and will be out or work and not really on her feet for 1 week. She lives alone and is a vegetarian doing weight watchers diet off and on. I wanted to make a few simple things that i could bring to her. The only thing I can think of is making my best blueberry muffins. I dont want to make casseroles and such as its just her and it would be way too food.

Any ideas of what else I could prepare???

I'm a weight watcher, too, so I can definitely relate. I would suggest going to the WW site and checking out the recipes on there. Non-members can access recipes and much of the site. If your aunt does the Core system (not counting points), I would suggest lots of fruits and veggies, and Fat free/sugar free jellos and puddings. If she counts points, a general rule of thumbs is:

every 50 calories = 1 point
every 12 g of fat = 1 point
every 5 g of fiber = - 1 point

So, you'd want to get/prepare things that are lowish in calories and fat and highish in fiber (which can be hard). I mostly watch the calories and fat. If you're making a recipe, you'd add up all the cals, fat and fibers for all the ingredients then divide by the number of servings. It sounds like a lot but is really quite easy to do. If purchasing foods, though, just watch cals and fat. Also, Weight Watchers has some good snack cakes and muffins you can look for. And No Pudge has very yummy, WW friendly brownies and also sells ice cream bars.

Sorry if I just totally overwhelmed you but I'm sure your aunt will appreciate you taking into consideration her dietary habits in your kindness to help!

thanks mstammy, no you didnt overwhelm me at all as I follow weight watchers myself.

Thank you. I ended making a baked mac and cheese with brocolli, I used lower fat everything and I cooked it in individual disposable loaf pans. I dont know the points and I dont think she will be counting but she will be just aware of what she is eating. I kept the blueberry muffins as I normally make them, just because she loves them.
