I guess if you were having a gb attack it could. But can't imagine it doing so just as a matter of course.

Yes, the gallbladder can impact the heart rate. I had panic attacks, heart palpitations--some so strong they woke me from a dead sleep, fluctuating blood pressure and fluctuating heart rate before being diagnoses with gallbladder problems. The mechanism that causes this is unclear to me.

If you are in pain, then I could see how it would increase your heart rate. Are you drinking enough fluids? Dehydration can also do this and so can stress.
