I know someone who added there stepchildren on to there ssdi claim. Will they be able to collect for them?

I would think that the kids would just have to be their legal dependents.

Yes, you can add step children as long as you and your spouse are paying at least 50% of their monthly expenses. You add them with the same process as you would your own children. If the stepchild lives with you, it's a shoe in.
