After how many infections and bouts of tonsillitis do they decide to take out the tonsils? Or does it depend on the doctor? Im on Amoxicillian again for another infection. Ive had infections off and on for years.

With me it wasn't a matter of number of bouts of strep throat/tonsilitis, but because I had cryptic tonsils (chronically infected), which had chunks of white stuff in them. I was tired of being self conscious about the possibility of having bad breath or the chance that I might be talking and have one of those nasty things break loose into my mouth.

For years I tried gargling, trying to extract them myself on a daily basis. Then I got concerned because I started to have bleeding from my tonsils and was worried there was something seriously wrong with me. So I went to an ENT who indicated my tonsils could be removed, but warned me about the surgery...

Since you are an adult - I assume - just tell the ENT you want them out. That's what I did.
