Hi, my dad has had high cholesterol for some time now. From '91 to '02, his
cholesterol remained almost identical (~175 LDL, ~40 HDL), with the total
cholesterol jumping from 233 to 247. However, his recent test was somewhat
surprising. His HDL and Triglycerides remained almost the same, but his LDL
levels shot up to 205, making the total cholesterol 278. Prior to this
test, he started taking Celebrex and also was trying a vinegar/grape
juice/apple juice drink that was suppose to remove cholesterol from the body
(so much for that!). I even read that Celebrex had a cholesterol lowering
effect in some people who tried it. Does anybody have an explanation on how
this could've happened? Thanks for the ideas.

Yes, bad results are one reason. I would never accept as true any results that seemed out of whack. It has happened to me on several occasions with lipid profiles. I would get a recheck. Maybe it is correct, but maybe it is not. Lipid numbers can jump 15% in one day for no reason.
Have him get a re-check if the numbers are bothersome.
