About two months ago, I developed a sleep problem where I feel tired, but when I try to sleep, I can't fall asleep and then end up getting up to read and then the food binging starts. I can't seem to stop myself from craving carbs and sugar late at night. The really weird thing is that I am getting less sleep because of this problem, but I don't feel tired during the day. I'm really concerned about this because my inability to sleep seems related to the food binging and I don't want to gain a lot of weight over this problem. Has anyone ever heard of this problem suddenly starting?

Yes, I have...two possiblities come to mind (I'm sure there are more but I'm familiar with 2):
1. Side effects of medication....many can cause problems with sleep----do not rely solely on your doctor's imput on this as many of us have found out that despite our dr's denials, sleep returned to normal after changing medication.
2. Lyme Disease which in addition to sleep and neurological problems can also cause anemia (vitamin b and vitamin d deficiencies), low blood pressure, muscle and joint pain, abd problems, thyroid problems, depression, and pschiatric problems....some docs think that half of the chronic conditions we have are actually caused by lyme and/or its coinfections.
