I love to cook for my family. I cook from scratch. My family has rarely seen store bought cookies or bread. Needless to say this whole ACDF adventure has put a cramp in that life style.
Well, My neighbor brought me several zucchini. Family loves fresh baked zucchini bread and I thought it would be a great way to start back into things. So, I pulled out the receipe and got down to the last ingredient and it was COCO. WHAT? I have never put coco in my bread before. I looked up at the top of the receipe and I am making zucchini BROWNIES. Oh did I mention I collect receipes for a rainy day to try. Not raining but trying a new receipe. Washed out the buttered floured bread pans and got out the brownie pan.
NOw I have to wait for someone to go to the store and buy coco. So receipe half done sitting in mixing bowl.
And I am pooped!
Have a laugh on me. :D I did. What else is there to do.

The thing I like most about zuccini is that it's so easy to grow that even I can't screw it up. I like it fried, and also as bread, it's awesome. It's also one of the first things to be ready to eat in my garden, so it's a quick success story to claim for the season! :D

Well guess I can blame this one on meds also.
A few days ago was cooking dinner and could not find salt shaker after looking what I thought everwhere,so got out spare one to use.When DH came home went to fridge and said to me since when do we keep salt shaker in here?
Anyone else want to own up?

Just have to tell you that was the best brownies I have ever made. I over heard 17 year old son offer them to a friend saying mom is better. She made brownies and these are better than before the surgery. :D Never did tell them there was zucchini in them. They would be grossed out. Keith-want the receipe?

This which started out as a mistake is a fast favorite and I have made 2 batches. 1 on mistake and 1 on purpose.
Zucchini Brownies
PREHEAT OVEN AT 350* PREPARE 13x9 DISH BY GREASING IT
3 cups peeled, grated zucchini
4 eggs
2 cups sugar
1 1/2 cups oil
1 cup nuts (optional)
BLEND TOGETHER
2 cups flour
2t. soda
1t salt
2t cinnamon
4T cocoa
STIR DRY INGREDIENTS TOGETHER
ADD DRY INGREDIENTS TO ABOVE MIXTURE
ICE WITH CHOCOLATE ICING

Take whatever your drug of choice is. 2 weeks post-op I am definitely fond of flexerall (a muscle relaxer to stop those nasty muscle spasms that make me look like a spas). I think I have been pushing too hard. I hurt today and back is very tight. But I know if I don't keep pushing through this I will never get my strength back or make it through a day of kindergarten (Aug. 21). :round:
