You are eating too much insoluble fibre and not enough soluble fiber that absorbs fluid.
Potatoes, carrots, beets, turnips and the inside of grains like corn, rice, oats, barley and wheat-- the out side brans are all insoluble and absorbs no water.
Psyllium seed husk is very good soluble fibre.
