Sounds like you had type 2 diabetes but have gotten it under control with your diet. Your numbers seem fantastic right now and I'd just keep doing what you're doing. A fasting number for a non-diabetic person should be under 100 and under 90 is even better. Yours are not in the diabetic range (over 126) but you are right to keep a close watch on them. You seem to be doing extremely well keeping things under control and your numbers are nothing to worry about right now. The *** says that any fasting number over 100 indicates prediabetes, and for you, I'd say that your fasting numbers are good since you were in the diabetic range before. If you can keep them where they are at now then you'll be just fine and won't need medication. If the fasting numbers go up over 126 then you'll probably be looking at some type of medication at that point. As for the A1C, I'm pretty sure it should be under 5 for a non-diabetic person. You're pretty close to that and it wouldn't be considered a diabetic number....just prediabetic at this point, and even at that you're right on the edge and most doctors would be happy with your numbers considering where they were before.
As for the whole blood versus plasma. A home meter usually tests whole blood and a lab tests plasma (which would give slightly higher results). If your meter reads under 140 then that would probably be a whole blood number and in range. The difference of a reading between whole blood and plasma is minimal from what I understand.
