This is probably happening because of the amount of fat in the food. Fat slows the absorption of carbs, so it takes a longer amount of time before your blood sugar will rise. Also, every meter has about a 20% error on it, so each test will be slightly off. For example, one time you may read 200, when your BG is actually anywhere between 180-220. I don't know how close between the tests were, but it may seem like a bigger jump than it was due to the 20% error of the meter.
