What to eat?

Hi there
i'm trying to put some kind of a menu together to eat better
what does any of you diabetics eat on on a regular day?
I work during the day so looking for lunch and dinner ideas
for breakfast I usualy have whole wheat toast and some low fat cream cheese

My husband, who is T2, usually has a small tin of flavored tuna (he especially likes the Thai chili tuna), a bag of nuts, and a piece of fruit. His blood sugars are often low so he often has a carby snack in the afternoon. Because I am a T1 and need to gain weight, I tend to eat a lot more carb and fat.

I have been eating more fish like smoked salmon and haddock

I eat a lot of eggs. Fortunately, I raise chickens, so they are plentiful!

Most days I eat a veggie and cheese omelet for lunch, no carb, with an 8oz glass of milk. If we have dinner leftovers, I have that.

Breakfast is usually a smoothie - milk or yogurt, fruit, peanut butter, something like that.

Dinner consists of some form of meat, a starch and veggies. My family (four boys) don't like casserole-type stuff very often, so most of our meals are not heavy on noodles/bread.

Meals usually aren't too hard....it is the snacks that get me!

Thanks for the menu ideas, I hear you on the snacks people in work are always bringing food in and snacks it is hard to walk past them all the time.

I'm still experimenting with my diet, but for me nuts and full-fat cheese have proved to be the best snacks so far. However, I'm trying to gain weight so the density of calories is not a problem. I'm sure my cardiologist will raise his eyebrows when he sees how much fat I'm eating, but my blood lipids were the best ever last time, with total cholesterol of 153 and triglycerides at 102.
