It's always quick to chop up some lettuce, cukes, radishes, celery, fennel. Have them washed, in the fridge, and ready to go.
Hamburgers (lamb burgers, turkey burgers); roast a chicken - good for several meals; cold cuts without nitrates, sweeteners (I can usually find turkey and beef bologna); cheese in a pinch (too much slows my weight loss).
Salsa/piquante, salad dressings, soy sauce - are all good flavorings for quick cooking - just watch the carb counts.
(Just for info, I do another plan, but this would all work on Atkins.)
