For omelettes, why egg WHITES but not the whole egg??

I always read about egg-whites omelettes and am wondering what is so wrong with the yolk?? Is it the cholesterol (sp?)??

I already pay $3.40 for free -range eggs, not using half of each egg seems like a terrible waste.

It's a result of the wrongheaded cholesterol scare of the 70's and 80's when people believed that DIETARY cholesterol was bad because SERUM cholesterol was.
A whole egg is a very healthy food and most medical scientists today realize that!

Re: For omelettes, why egg WHITES but not the whole egg??

The protein of an egg is divided about evenly between the white and the yolk, but ALL of the fat (and therefore cholesterol) is in the yolk. Some people are concerned about the added calories from the fat in the yolk, and some people are concerned about the cholesterol (which is one of the types of fat) for health reasons. I have a very strong FRUGAL streak, which means that I can't use just half the egg and throw the rest away.

that may be true but it's also the most unhealthy part, which tends to be true with most foods.

The egg as a whole is not bad at all in my opinion. I see no problem with eating the egg as a whole. However, when you compare the benefits of egg whites compared to the yolk, the egg whites wins hands down.

Re: For omelettes, why egg WHITES but not the whole egg??

Why? What is so remarkable about the egg whites? Protein? The majority of people eat too much protein anyway, under the mistaken belief that they can really utilize that much protein in a day. All it adds up to is a bigger burden for the kidneys. Anyway eggs are a nutrient dense food. They have a high proportion of nutrients in relation to their calorie count, however, the yolk is the major source of the egg's vitamins and minerals, as well as important cartenoids. Do not waste these! The only reason you'd just eat the whites is for protein and you'd be missing out on important B Vitamins. I don't eat any meat, so I eat eggs whole for the B Vitamins. It works out well.
