Lemon Creme Pie with carob-nut crust
In processor throw in handful of raw cashews, handful of raw almonds, and handful of dates. Blend. Add a couple of tablespoons of carob powder. Then add just enough water to bind. Line plate with seran wrap and empty crust mixture in and push down with back of spoon. Put in freezer for about 5 minutes to set.
Throw in a banana, 1/2 cup shredded coconut (unsweetened), 1 tbsp flax oil and 2 tbsp fresh lemon juice. Blend til combined and creamy.
To serve: Lift crust off plate, peel off seran wrap and put on plate. Spread lemon creme onto the crust. Voila!! Ready to eat, full of nutrients and no added sugar!!
Takes about 10 minutes to make from start to finish
