Is veggie chili a good choice? I went to a healthy restaurant today for lunch and had a bowl of it. It had black beans, kidney beans, tomatoes, onions, etc.. and was really really tasty.
For breakfast I had a large apple, some cottage cheese, and a nonfat latte.
And as a "dessert" I just ate some vanilla frozen yogurt with cut up strawberries (and a few handfuls of cereal).
Does this sound like a healthy day so far???
Veggie Chili is an awesome choice! I make it very often and freeze it in personal size portions. It makes a great dinner with some grated cheddar cheese and low fat sour cream. Here is my recipe - I made it up years ago and have been enjoying it ever since!
Ingredients:
1 tbsp chopped fresh garlic
3 tbsp finely chopped white onion
2 tbsp olive oil
1/2 cup chopped celery
1/2 cup chopped red pepper
1/2 cup chopped green pepper
1/2 cup chopped carrots
1/2 cup sliced zucchini
1/4 cup sliced mushrooms
1/4 cup kernel corn
1 cup kidney beans
1 cup chick peas
1 can of Diced Tomatoes
1 can of Tomato Paste
1 tsp ground cumin
1 tsp black pepper
1 tsp cayenne pepper
Directions:
Saute garlic, onion in olive oil. Once soft, saute hard veggies (carrots, celery). After about 5 minutes add peppers, mushrooms and zucchini. Saute for about 10 minutes. Then add diced tomatoes, tomato paste, corn and legumes. Bring to a simmer and add the spices. I usually let mine simmer for about 45 minutes. Serve with grated cheddar cheese and sour cream. Keeps well in freezer and makes a great, healthy supper!
