stir fry?

I was wondering, first of all, how healthy stir fry is? And second of how I could make it? I saw in a magazine about stir fry with just some rice and vegatables which would be perfect for me. But do I need a special kind of pan? Or can I do it in a regular pan? I don't mean to be asking stupid questions but I just don't really know how to make it. Thanks.

Stir fries are great coz the veggie are cooked really quickly and retain their nutrients and their crunch..

The key is to cut all the veggies according to how fast they cook ie you wanna cut carrots a bit thinner coz they take longer to cook - coz you want everything to be cooked in the same amount of time. Or, you could also put slower cooking veggies in first so they have extra time.

You can make a light 'sauce' out of broth, soy sauce, vinegar and honey - with a pinch of red pepper flakes for heat and something to thicken. Or, you could make a sweet 'n' sour type sauce.

Woks are easier coz you can move the stuff around a lot without it falling over the edge of the pan. But a frying would work too.

You have the heat on really high but they cook very quickly

Onions, and strips of carrot and peppers works great esp. if you throw in a handful of beansprouts 1 minute before everything else is cooked.
