Stir fries are great coz the veggie are cooked really quickly and retain their nutrients and their crunch..
The key is to cut all the veggies according to how fast they cook ie you wanna cut carrots a bit thinner coz they take longer to cook - coz you want everything to be cooked in the same amount of time. Or, you could also put slower cooking veggies in first so they have extra time.
You can make a light 'sauce' out of broth, soy sauce, vinegar and honey - with a pinch of red pepper flakes for heat and something to thicken. Or, you could make a sweet 'n' sour type sauce.
