Let's share our favourite healthy recipes!

I was thinking that I would love to get some new healthy recipes to spice up my meals! I will be going grocery shopping this weekend and would love to try something new!

I'm going to start by sharing my homemade hummus recipe. Refer to the "Hummus - good or bad?" message for the recipe!

Eggplant Parmesan (my version):
Cut slices of eggplant 1/4 inch thick. Roll in egg, then breadcrumbs. Fry in olive oil til crisp & golden. Pour tomato pasta sauce over eggplant, then sprinkle grated cheese. Takes about 20 minutes.

Salmon Puff.
Cook salmon steak on 350 for 10 minutes. While it's cooking, roll out puff pastry. Put salmon steak on pastry, spread on low-fat cream cheese, pile on chopped spinach. Close the pastry with milk or water. Cook on 350 for 30 minutes.

Yum!

Heres a good one.

Chicken Sausage

1 pkg ground chicken(hard to find but soooo delish) I get it at vons
4 cloves garlic
1/4 c. parm cheese
1 tsp fennel
parsley
salt & pepper

Finely chop garlic and Parsley and cook on med. till golden. Combine all other ingredients in a bowl. Add garlic parsley mixture. Form into pattys. Cook medium until golden brown.

Mmm! They both sound delish! Actually, the eggplant pizza reminded me of one of my fav eggplant recipes

Eggplant Pizzas

1 large eggplant
3 tomatoes
1 cup skim milk moz. cheese
1 tbsp basil

1. Cut eggplant into 3/4" round slices. Saute in a frying plan with olive oil.

2. Cut tomato into 1/2" round slices. Top sauteed eggplant with tomato slice.

3. Sprinkle moz. cheese on top of eggplant/tomato rounds then sprinkle with dried basil.

4. Broil in oven until cheese is melted and tomato is slightly cooked!

5. Service with yummy parmesan risotto!

Flaxseed crackers

Put 1 cup flaxseed in bowl with 1/2 - 3/4 cup water. If you like you can add a handful of seeds or nuts (like pumpkin or sunflower). Let sit for a few hours so the liquid gets gooey and helps the seeds to bind together.

Add 1/8th cup soy sauce (MUST add soy sauce - its what gives it some flavor) and a good sprinkling of kelp granuals

Lightly oil a cookie sheet and spoon dollops of the flax mixture onto sheet and flatten a little. Cook for 1/2 at low heat - 250. Turn and cook 1/2 hour on other side

They'd done when they're dry to the touch and crunchy!!

btw: if you buy flaxseed cracker in the healthfood store they're about $6 just for a few!! But the homemade type work out to the less than 50c for about 12 big ones!!

They do look at bit weird but taste great and are about as healthy a cracker could possibly get. I usually just eat them on their own when I need something crunchy or you can put pate or tuna on top.

General Taos Tofu

Sauce:
3 chopped green onions
1 tbsp minced ginger
1 tbsp minced garlic
2/3 cup stock
2 tbsp soy sauce
4 Tablespoons sugar or honey or agave nectar
2 good pinches of crushed red pepper (depending how hot you like it - but definately add some as it gives it a kick)
1 Tablespoon sherry (optional)
1 Tablespoon white vinegar

Veggies/protein:
Tofu cut up into triangles, dusted with a little flour and sauteed til brown
Mixed veggies - steamed broccoli, carrots, onions, courgette etc.

1. Whatever grain you're gonna serve it with, put it onto cook now (i use quinoa - and its cooked in 12 minutes). If you're steaming veggies, start them now. If you cooking tofu, start browning it now.

2. Saute the ginger, garlic and green onions in oil for a few minutes till they're cooked. Add rest of the sauce ingredients and bring to boil.

3.In little bowl add 1 tbsp corn starch and add a little water to mix. Then, add this to the sauce and stir til it thickens.

4. Add browned tofu to sauce and coat.

5. Serve tofu sauce mixture and veggies over quinoa or rice.

Carbless- Mashed Sortof Potatoes

A LOT of cauliflower
Garlic
salt
pepper

Steam the cauliflower until it is like falling apart
-I use Broccoli as well but the green color freaks some people out-
Cook the garlic until golden
Put them into a blender add a little salt & pepper and whalla!!!!

Yummy & creamy and u can use them in the meals that you used to eat before when you could actually eat potatoes !!!

Fish & Chicken are both wonderful served over your "new" potatoes too!!

In pan or wok add a tbsp of oil and add 1/4 shredded cabbage, and 1/2 thinly sliced onion, and a few pinches of mustard seeds and cook for about 5 minutes. Add couple of tablespoons of broth, cover and cook on low for another 10-15 minutes until tender. Before serving add a handful of fresh bean sprouts and cook for 1 minute. Grind some fresh pepper onto mixture and stir.
