Hi acid--
cheeses are a good source of low-carb, high-quality protein. Some are higher in fat, some lower--IF you really care about fats. I think reduced fat cheese is usually yucky, but low fat cottage cheese seems to work.
But, why are you so concerned about fats if you want to gain weight? fats are the densest possilbe source of calories. In fact, I'd add high-quality, extra virgin olive oil to everthing, if I were you. just avoid trans and hydrogenated fats. you'll be allright.
