MFS is a starch that has been treated physically and chemically to modify one or more of its physical or chemical properities. The starch could be from various sources i.e. corn,wheat, potatoes, rice or tapioca, it all depends on who is manufacturing it.

It is used as a binder. It also adds to shelf life.
