Just wanted to tell you that you're not alone! I'm in north Florida, so we get way hot, humid summers and pretty chilly winters. With the heat index, we're looking at 110 to 115 today with 80 percent humidity.
I'm living on salads, grilled chicken & fish, fruit & veggies. Whenever I grill chicken, I always throw on a few extra with whatever herbs/marinade I'm doing for leftovers the next day to put on a big dinner salad.
Another "refreshing" thing is to take whatever fruit you might have in your fridge that's beginning to get over-ripe and use it as a base for salad dressings. I'm hooked on watermelon-raspberry vinagrette right now that's a cinch to make. Any citrus you have that's getting a little old can be used for marinades, too (fresh lime juice & zest with chopped cilantro makes a wonderful base for a marinade for fish or chicken).
