adding more protein to your diet would definitely help you build muscle when you start exercising again. if you're just trying to gain weight for the sake of gaining weight but want to avoid fats, maybe try overloading on carbs? your body will break the carbs down into sugars to use for energy and then try to store any excess sugars it can't burn off. im really not too sure if this logic works or not, i just know that i, along with thousands of other people, lost a lot of weight by cutting out carbs. maybe you could try loading up on pasta and rice dishes for a couple of weeks and see where that gets you.
